Candied Violets

Recently we were checking on all the tiny blooms in our yard while sitting outside with a friend. Owen and Carmel asked if they could eat some of the violets and suddenly I remembered something about having them candied. We ended up collecting about two cups or so which, after starting the candying process, I quickly realized was a little over ambitious. One recipe describes them as being "unbelievably tedious to make" and although I read this before I started I ignored the warning. I do that. But I will say, tedious or not, it is such a wonderful way to welcome and appreciate the early bounty that Spring offers us. Lately, I am finding myself searching our yard for more...
dandelion greens? Maybe.
